Preheat the oven to 190ºC.
Blend the cauliflower to a rice like consistency, microwave for 2-3 minutes.
Squeeze any excess liquid from the cauliflower.
Whisk the eggs.
Add in the lemon juice, cauliflower, cilantro, salt and pepper and add enough flour to create a dough that you can work easily. Mix well.
Shape 6 small tortillas and place them in a baking tray with parchment paper.
Bake for 8 min on each side.
