Cold Pea, Broccoli and Courgette Soup

Peel the onion and sauté it in some oil.
Add the chopped vegetables and the peas to the sauté. Season with salt and pepper.
Cover with water and boil for 10 minutes.
Puree the soup with a blender. Mix and leave to cool.
Fry the quail eggs.
Serve the soup cold in a bowl with a fried egg and Parmesan shavings on top.
