Mini Salmon Hamburgers with Lentil Hummus
Mince salmon in food processor.
Slice onion and add to salmon mix.
Season with salt and pepper.
Add the egg and breadcrumbs.
Mix everything together.
Form small hamburgers and and fry each one in a pan until cooked through.
Cut the peppers and lightly grill.
Blend the lentils in a processor until they form a rough paste.
Add lemon juice, oil and salt.
Spread the lentil hummus over the bottom half of each burger bun.
Place a salmon burger on the bun and garnish with grilled vegetables.
- 180g fresh salmon
- 150g spring onion
- 150g green pepper
- 2 egg whites
- 180g cooked lentils
- Juice of half a lemon
- Salt and pepper
- 1 tbsp olive oil
