Overnight Oats

In a medium bowl, stir together the oats, coconut milk, vanilla extract, mashed banana, and shredded coconut.

Taste the mixture to see if it needs honey, add if required.

Transfer the mixture to an airtight container and refrigerate overnight.

Garnish with fruit.

  • 1 banana, mashed
  • 300ml coconut milk
  • 3g vanilla extract
  • 25g dessicated coconut
  • 50g rolled oats
  • 25g chia seeds
  • 15g maple syrup or honey
