Turkey Meatball Tortellini Soup

Combine the turkey, breadcrumbs, egg, parsley, garlic, salt and parmesan cheese.

In a large non-stick pot, heat olive oil over medium-low heat and add the celery, onion, carrot and garlic. Cover and reduce heat to low. Cook for 5-6 minutes.

Add the chicken broth and increase heat to medium-high and bring to a boil. Season with black pepper.

Form small meatballs, about the size of a walnut.

Reduce heat to medium and gently add the meatballs to the pan.

Cook for about 4 minutes.

Add the tortellini and simmer until cooked according to package directions.

Add the baby spinach and top with freshly grated parmesan. Stir to combine and serve.

Meatballs:
  • 300g turkey mince
  • 15g breadcrumbs
  • 1 egg
  • 10g parsley
  • 1 clove of garlic
  • 1g salt
  • 15g parmesan cheese
Soup:
  • 2 tbsp Olive oil
  • 2 stalks of celery
  • 1 onion
  • 1 carrot
  • 1 clove of garlic
  • 425ml chicken broth
  • 300g tortellini pasta
  • 30g baby spinach
